Eat your way through the old quarter on this Baku street food tour, a three-hour walk through the lanes of the Old City and the streets around it, stopping wherever the food is good. This is the part of the city's food culture that never makes it onto a restaurant menu: bread pulled hot off a clay oven wall, qutab folded and griddled to order, sweets sold from the same family shops for decades.

Your guide does more than order for you. the signature street food of the country: paper-thin dough folded into a half-moon around a filling and cooked in seconds on a domed iron griddle called a saj. The classic fillings are greens, pumpkin and minced meat, and it is served dusted with sumac, often with yogurt on the side. Watching qutab being made is half the appeal — the dough is rolled almost transparent by hand.

You walk into Icherisheher through the gates and follow the narrow lanes between the caravanserais and the old houses, stopping at food spots along the way. The walking is short between stops, so there is plenty of time to stand, eat and talk.
